UK restaurant management platform Nory secures $37m and launches US expansion

Nory, a restaurant management platform based in the United Kingdom, has secured $37 million (€34 million) in Series B funding led by Kinnevik and launched US operations with a New York headquarters. The London-based company, founded in 2021 by Irish entrepreneur Conor Sheridan, provides an AI-driven operating system integrating workforce management, inventory oversight, procurement, business intelligence and financial reporting for hospitality operators.

RS Web Solutions reported that the funding round elevates Nory's total financing to approximately $63 million (€58 million). Sheridan, co-founder of Irish restaurant chain Mad Egg, has relocated to the United States to lead American operations as restaurants face labour inflation, fluctuating food costs and chronic staffing shortages.

Nory's platform leverages historical sales and operational data to generate forecasts and recommendations for staffing, purchasing and daily management decisions. The company states that clients typically achieve labour savings between 8 and 20 per cent, food waste reduction of nearly 50 per cent, and enhanced administrative productivity.

The platform's automation features reportedly reduce back-office workloads by over 100 hours per site monthly, though outcomes vary by restaurant concept and implementation. Nory claims its technology enables operators to make data-driven procurement and staffing decisions whilst minimising waste and optimising resource allocation.

US market entry includes partnerships with Black Sheep Coffee, Roasting Plant Coffee, With Love, Always, and Singas Pizza under OM Hospitality, with broader rollout planned for later in 2026. The company previously worked with UK and Ireland brands including Dave's Hot Chicken, the Jamie Oliver Group, Boston Tea Party and Azzurri Group.

Nory's integrated, AI-enhanced operations platform positions it between niche point solutions and enterprise applications in an increasingly competitive restaurant technology landscape.
